Surprise Birthday Trip!


Sorry for the long absence this week! We've been pretty busy, what with it being Ryan's last week before school starts, me trying to find a job, and my birthday coming up. On Friday I accompanied Ryan to a community service orientation activity for the first year law students at Columbia. We were there until about 11:30 when suddenly Ryan exclaimed that we needed to leave early or we'd miss our train. The only explanation I got for a while was: get your swimsuit, pack a suitcase, and hurry. Luckily we had made a delicious chocolate chip cookie and mint ice cream sandwich earlier and in our rushed state it was what refreshed and sustained us for the next couple hours.

We rushed over to the columbia station with our suitcases and cookie sandwich in tow, as I tried to keep guessing where we were going. I threw on this striped red halter dress over my red halter swimsuit because the straps match and line up perfectly like they were made for each other.








So delicious! The secret is to only partly bake the cookie, so it never gets crispy, and then assemble the ice cream and cookies like a sandwich and put it straight back in the freezer, and wait at least a day. Then the cookie and ice cream are the same temperature and consistency and you don't get the huge mess of biting the cookies, and the ice cream shoots out the other side and starts melting everywhere.

We got on the Long Island RailRoad Train at Penn Station and I guessed right that we were going to Fire Island. We took two trains, a taxi, and a ferry to get there, but it was so worth it! The beach was beautiful!

    that does look delicious. there are cookies similar to that that I eat at our cookie shop in the mall. I haven't had it in a few months. It's not ice cream though, just an amazing cream, but I would love ice cream too in between the cookies. Mmmmm!!!!!!!!!!!!!!!!
